I'm in LOVE with my crock pot! I mean really, who wouldn't be? It's like that perfect husband who has dinner ready for you when you get home from work! Except it doesn't take out the trash. Guess I will keep my man around for awhile! =) I found this recipe the other day on PINTEREST! I'm sure I don't need to tell you about this amazing and fabulous site! I adapted my recipe from Chef Mommy . I doubled my recipe, since I'm feeding my family and my sisters family! I'm always afraid when it comes to the kids. Will they eat it? Or will it be a chicken nuggets and french fries kinda night for them? Well, they scarfed it down!! Winner, winner Salsa Chicken Dinner!!! Anyways, onto the recipe.
2 pounds chicken (I used thighs, you can use whatever you like)
2 cans of Condensed Cream of Chicken Soup
2 cups of Salsa ( I used Pace Mild Salsa) you can add hot sauce on your serving if you have non-spicy food eaters as I do with the kids and the husband.
1 and 1/2 packages of Taco Seasoning (I used the low sodium type since crock pot cooking can cook down and make things a bit too salty for my family)
2 cans of Black Beans drained and rinsed
1 and 1/2 cups of Sour Cream
1 cup of Shredded Cheddar Cheese
Add the chicken, cream of chicken soup, salsa, taco seasoning and black beans to the crock. Cook on low for 6 to 8 hours. When ready to serve add sour cream and cheese to the crock pot and stir. I served it over Zatarains Yellow Rice! Yummy!!
This is a plate that I made for my bestie, Sarah the next day. I did not have anymore yellow rice left so I just used some Uncle Ben's Long Grain Wild Rice. Although it does not look that great, taste is EVERYTHING! I promise you, this is very delicious!
